Authentic Italian Lumache Rigate, made from durum wheat cultivated directly by the producer (Azienda Agricola Mancini ) using only semolina and water. Shaped using traditional circular bronze dies and slowly dried for 22 hours at temperatures between 36°C and 55°C, giving the pasta its distinctive texture and excellent ability to hold sauces.
